Tip of The Day:   Need a new quick chicken recipe the whole family will love?

This recipe is quick and delicious that even the pickiest eater will love.  My version of Chicken Parmesan

  1. Skinless chicken breast cut into large bite size chunks or strips.
  2. Italian seasoned bread crumbs
  3. Your favorite Spaghetti sauce
  4. Parmesan cheese or just your favorite grated/shredded cheese or both
  5. Cooking oil

Now I don’t bother with an egg wash as it’s not needed.

Cut up your chicken breasts to the size you want, smaller pieces are easier to eat and it cooks quicker.  With damp chicken pieces coat each piece thoroughly with the Italian bread crumbs.  Gently place the coated chicken in a large frying pan with enough oil that each piece is sitting in a little as you will not be stirring the chicken at all.  Cook on medium heat on the 1st side until a rich golden brown then turn each piece and cook until done and golden brown on the 2nd side as well.

While the chicken is cooking prepare the pan.  I always use my rectangle glass pan made for the oven.  Preheat oven to 350 degrees.  Pour a thin layer of your spaghetti sauce in the bottom of the pan, lay each piece of chicken in a single layer on the spaghetti sauce.  Spoon more spaghetti sauce onto each piece of chicken, as thick as you like.  Generously, sprinkle Parmesan or shredded cheese onto each piece of chicken.  Bake chicken until cheese is melted, bubbly and just a touch of brown if you like as the chicken was already cooked in the frying pan.

Caution chicken will be very hot!  Enjoy!

You know I really have to thank you and others like you on the internet. I have been so bored by cooking recently – and my meals have shown that. It is great to have new recipes that are easy to make with basic ingredients already at my finger tips. Thanks so much! I am one of those that usually have to substitute because i don’t have all the ingredients and a teeny grocery store that doesn’t carry much is 6 miles away and our big one is 12 miles so I can’t just run to the store :)

Our daughter was a “very” picker eater, she’s 23 now and getting better :) She loved it so much she asked for it all the time, I got tired of eating it but was glad I could get her to eat more meat. For my portions I always went light on the spaghetti sauce because I don’t really like red sauces but I do really like this too.
